A classic dish from Liguria, simple and fragrant. The fusilli hold the pesto perfectly, which with its intense basil aroma and the delicate flavor of pine nuts brings to the table the authentic taste of Italian cuisine. A quick yet elegant first course, ideal for any occasion.
Bring a pot of salted water to a boil and cook the fusilli al dente following the times indicated on the package.
Drain the pasta, reserving a ladle of the cooking water.
Transfer the fusilli to a pan or a large bowl and mix them with the Genoese pesto. Add some of the cooking water if necessary to make the dressing creamier and more enveloping.
Transfer to plates, add a drizzle of raw extra virgin olive oil and complete with some fresh basil leaves.
Serve immediately, hot.
