
A tasty and colorful appetizer made up of an outer layer of mozzarella rolled out with a rolling pin and a filling of Parma ham, beefsteak tomato, and arugula. The mozzarella is softened by heating it with its brine (and additional water) in the microwave or saucepan, then rolled, filled, and wrapped. About 12 slices are obtained to serve as finger food.






Place the mozzarella in a bowl with its brine and add more water until it is completely covered.
Heat in the microwave at 900 W for 7 minutes to soften the mozzarella (alternatively, heat in a saucepan with the same amount of water until the mozzarella softens).
Wash and thinly slice the beefsteak tomatoes; prepare the arugula and slices of Parma ham.
Transfer the softened mozzarella with a spoon onto a sheet of parchment paper, cover it with a second sheet, and quickly roll it out with a rolling pin until obtaining a thin rectangle about 35 x 25 cm.
Carefully remove the top sheet of parchment paper, salt the surface, and distribute the slices of Parma ham over the mozzarella rectangle.
Add the slices of beefsteak tomato and the arugula, then another layer of Parma ham if desired.
Roll it all up using the parchment paper, tightening well as you wrap the filling.
Let the rolled-up roll rest in the refrigerator wrapped in parchment paper for at least 10 minutes.
Remove the parchment paper and cut the roll into slices about 2.5 cm thick to obtain about 12 pieces.
Serve as an appetizer or finger food.

Store in the refrigerator for up to 2 days. Do not freeze.
Get creative with other fillings (e.g., prosciutto and melon with mint). If you don't have a microwave, heat the mozzarella in a saucepan with water until it becomes pliable.
