Petra 7220 is a type 00 soft wheat flour, ideal for fresh pasta. Suitable for both manual processing and with kneading machines, sheeters, and extrusion systems. It guarantees optimal results with any liquid used in the recipe: water, whole eggs, only yolk, only egg white, or a mixture of them. It ensures perfect hold and yield with any production management: quick cooking, precooking, and even freezing of the dough both raw and cooked. Storage: keep in a dry and dark environment. Processing: sweet with cast iron rollers. The long roller milling diagram is designed to best respect the characteristics of the starting cereal. Thanks to constant control of milling parameters, Petra 7220 is characterized by excellent technological stability. The particular milling diagram allows obtaining very low ash content, essential to prevent product graying over time.
