Denomination: Riesling DOC Grape Variety: 100% Riesling Renano Name: Savium Alcohol: 13° Volume: 0.75L Production Area: Ponzano Monferrato (AL), Piedmont, Italy Description: The harvested grapes rest overnight in crates so that the cool moonlight lowers the temperature of the bunches. The fruit is pressed whole, the must is transferred in the evening to remove the coarse lees and then fermented at a controlled temperature. At the end of the alcoholic fermentation, it is racked only once to leave the fine lees that will preserve the wine until bottling filtration. Aged in steel for about 8 months, after which bottling takes place. Another two months in the bottle before being released on the market.
