Aging in 500-liter tonneaux adding yeast paste and performing periodic batonnage until the beginning of summer of the year following the harvest; repeated rackings are carried out until a natural clarification is achieved; bottling and subsequent maturation in lying bottles until the time of marketing. Wine of intense ruby red color with violet reflections; the bouquet is very intense and persistent with hints of cherries, blackberries, and a slight note of vanilla due to aging in wood; on the palate, the wine is savory, with good structure and a good balance between alcohol and acidity. Excellent pairing with traditional Piedmontese first courses, especially recommended with great boiled meats and bagna cauda.
