Aging in steel by adding yeast paste and performing periodic batonnage until the beginning of the summer of the year following the harvest; repeated racking is performed until a natural clarification is achieved; bottling and subsequent maturation in lying bottles until the time of marketing. Wine of garnet red color with pale orange reflections; the bouquet is very intense and persistent with hints of licorice, violet, and cherries; on the palate, the wine is savory, well-structured, and with a good balance between alcohol, tannin, and acidity. Excellent pairing with first courses of the Piedmontese tradition, especially recommended with first courses and with grilled red and white meat.
