Mirakel is the Gueuze from De Ranke made with a blend of three Lambic of one, two, and three years. Two come from traditional producers of Pajottenland, the other is sourced from De Ranke and called 'Spierenlambic', in honor of the small stream that flows near the brewery. Funky, complex and balanced aroma, with earthy notes, wood, cellar, tart red fruit, citrus (lemon, grapefruit, and lime), white grape, gooseberry, green apple, leather, and herbaceous nuances. With a medium-light body and low carbonation, on the palate it reveals the classic barnyard and cellar taste typical of Lambic. Fresh, defined, round, and dry flavor, with citrus peel, earthy notes, woody, sour fruit, and herbaceous tones: all accompanied by a slight malty backbone. Quite dry finish with a persistent milky acidity.
