Mirakel is the Gueuze from De Ranke made with a blend of three Lambics aged one, two, and three years. Two come from traditional producers in the Pajottenland, while the other is produced by De Ranke and called "Spierenlambic," in honor of the small stream flowing near the brewery. It has a funky, complex, and balanced aroma, with earthy, woody, cellar notes, unripe red fruit, citrus (lemon, grapefruit, and lime), white grape, gooseberry, green apple, leather, and herbal nuances. With a medium-light body and low carbonation, it reveals the classic barnyard and cellar flavor typical of Lambic on the palate. The taste is fresh, bold, round, and dry, with citrus peel, earthy, woody, unripe fruit notes, and herbal tones: all accompanied by a slight malty backbone. The finish is quite dry with a persistent lactic acidity.
