Noblesse Oblige. This collaborative beer is the result of a collaboration in 2015 between the Jester-King brewery in Austin (Texas) and the Brasserie Au Baron. It has an ancient gold color, slightly hazy, and a fine, stable white head. The first nose suggests a dance between hops and honey. The hops are likely American, with floral notes at first, followed by exotic fruit and citrus. To appreciate it, you really have to put your nose in the glass. Once opened, the nose becomes fermentative, rustic, centered on hay and the barn, in line with the internal yeast of Brasserie Au Baron. But the hops resist, and it is a true play between these aromas.
