The production of rice in the plains of Isola della Scala is ancient and linked to the abundant presence of clear waters from natural springs and ditches that feed old mills with wooden wheels. Here begins the production of Riso Vialone Nano Veronese IGP. It is a semi-fine rice increasingly considered as the progenitor of risotto rice. The grain contains three starch cores that make it ideally suited for the production of so-called 'all'onda' risottos and creamy ones.
