Acquacotta is the typical dish of the butteri, the horseback shepherds typical of the lower Maremma, the Tuscia Viterbese, and the Agro Pontino. A humble dish that the butteri carried with them during their workdays. It contains vegetables cut into chunks, varying in type depending on what the season offered. Sometimes, to give the acquacotta a bit of strength, given the hard work of herding, they would add pork rind or Cinta Senese pancetta or pork. The butteri ate it with pieces of black bread and extra virgin olive oil.
