Mussels with white beer are a typical dish from Belgium, a small country rich in gastronomic traditions; its beers, often used in many dishes, are famous worldwide, as are the French fries found on every street corner, said to be the best in the world.
Clean the mussels by removing the beard and discarding any broken ones. Rinse them under running water.
Slice the celery into ½ cm thick pieces. Peel the lime, cut the zest into strips, and squeeze it to obtain the juice.
Cut the onion in half and then into 2-3 mm slices. Melt the butter in a large pot and add the celery, lime zest, and onion.
Let the vegetables soften, then add the lime juice and the beer. Cook for a few minutes.
Add the ground black pepper and the mussels. Cook over high heat until the shellfish fully open.
Serve immediately accompanied by French fries.
