Dublin coddle is a delicious Irish main dish, rich and tasty, made with pork and potatoes, flavored with stout beer.
Preheat the oven to 160 °C.
Peel the potatoes and cut them into thick slices.
Slice the onions.
In a large casserole, melt the butter and fry the bacon until crispy.
Add the whole sausages and brown them on all sides.
Arrange a layer of potatoes, then a layer of onions, the bacon, and the sausages in an ovenproof dish or a casserole suitable for the oven.
Pour the chicken broth and stout beer over the mixture.
Add the sprigs of thyme, salt, and pepper to taste.
Cover with a lid or aluminum foil and cook in the oven for about 2 hours, until the potatoes are tender and the flavors are well blended.
Serve hot, optionally garnished with more fresh thyme.
