In a saucepan, whisk the egg yolks with the brown sugar, then add the maple syrup and cook the mixture over moderate heat, stirring continuously with a wooden spoon until it thickens, being careful not to let it boil.
When finished, remove the cream from heat and dissolve the softened and squeezed gelatin in cold water.
Whip the egg whites and cream separately and fold both into the warm cream.
Place the mixture into a pastry bag with a star tip and distribute it into four or six individual cups.
In a small saucepan, bring the citrus juice and sugar to a boil, then remove from heat and add the liqueur.
Let the prepared sauce cool, then distribute it over the cream.
Garnish each cup with a chocolate flower and serve.
