Wash the peppers, cut them into regular sections and remove the seeds. Blanch them to soften and dry with absorbent paper.
In a mixer, blend Tomino and Erborinato di Capra with salt, pepper, and finely chopped chives until a smooth cream is obtained.
Fill the peppers with the cheese mousse, using a teaspoon.
Arrange the stuffed peppers on a serving plate and decorate with fresh chives.
Store in the refrigerator, well covered, for up to 2 days. Serve cold.
