Delicious croquettes crispy on the outside and creamy on the inside, with a heart of Mixed Sweet Rustic Cheese that melts in your mouth. Perfect as finger food, appetizer, or starter, especially when paired with a gourmet sauce like the Onion and Balsamic Vinegar of Modena IGP Compote.
Wash the potatoes, boil them with the skin in salted water for about 30 minutes. Drain, peel, and mash them while still hot.
In a bowl, combine the mashed potatoes, egg, grated Parmigiano, half of the breadcrumbs, flour, salt, pepper, and a grating of nutmeg. Mix until you get a firm but workable dough (add more breadcrumbs if needed).
Take a small amount of dough, flatten it on your palm, insert a cube of Mixed Sweet Rustic Cheese, and close it well to form a ball.
Coat each croquette first in flour, then in a little water (or egg white), and finally in breadcrumbs.
Heat the oil to 170°C. Fry a few croquettes at a time until evenly golden (3-4 minutes). Drain on absorbent paper.
Serve the croquettes hot, still gooey, accompanied by the Onion and Balsamic Vinegar of Modena IGP Compote for a sweet and sour contrast.
In the refrigerator for up to 2 days, stored in an airtight container. They can be frozen (uncooked) and fried directly when needed.
