Delicious croquettes crispy on the outside and creamy inside, with a heart of Mixed Sweet Rustic Cheese that melts in your mouth. Perfect as finger food, appetizer or starter, especially when paired with a gourmet sauce like Onion Jam and Balsamic Vinegar of Modena IGP.
Wash the potatoes, boil them with the skin in salted water for about 30 minutes. Drain, peel and mash them while still hot.
In a bowl, combine the mashed potatoes, the egg, grated Parmigiano, half of the breadcrumbs, the flour, salt, pepper and a grating of nutmeg. Mix until you get a firm but workable dough (add more breadcrumbs if needed).
Take a small amount of dough, flatten it on your palm, insert a cube of Mixed Sweet Rustic Cheese and close well forming a ball.
Coat each croquette first in flour, then in a little water (or egg white), and finally in breadcrumbs.
Heat the oil to 170°C. Fry a few croquettes at a time until evenly golden (3-4 minutes). Drain on absorbent paper.
Serve the croquettes hot, still melting, accompanied by Onion Jam and Balsamic Vinegar of Modena IGP for a sweet and sour contrast.
Store in the refrigerator for up to 2 days, sealed in an airtight container. They can be frozen (raw) and fried directly when needed.
