Testa Conserve’s Desalted Anchovy Fillets in EVO Oil represent a delicacy that expresses the freshness of the Mediterranean and the craftsmanship of traditional Sicilian cuisine. This ready-to-eat product is prepared with fresh anchovies desalted and preserved in IGP extra virgin olive oil, guaranteeing the highest quality and authentic taste. Description Testa Conserve Desalted Anchovy Fillets celebrate anchovies (Engraulis encrasicolus), a small but intensely flavoured fish rich in omega-3. The anchovies, fished in the Mediterranean Sea (FAO Area 37.2.2 and 37.1.3) using the purse seine method, are desalinated using traditional methods and preserved in high quality PGI extra virgin olive oil. This artisanal process enhances the natural flavour of the anchovies, maintaining their soft and tasty texture. The complete production chain, from fishing to processing, is guaranteed by the food company Testa Conserve, which operates in accordance with a Hygienic Safety System according to the HACCP method and in compliance with current regulations.
