PRODUCTION Production area: Valle d'Itria Vinification: destemming of the grapes with immediate temperature reduction to 6-8°C and maceration for 12 hours, soft pressing, static decantation and fermentation at a controlled temperature of 16 - 18°C Aging: at the end of fermentation, it is separated from the coarse lees and left to mature on the fine lees for 3 months, then stabilized and bottled. Bottle aging for 30/40 days. TASTING NOTES Color: straw yellow with greenish reflections Aroma/taste: elegant and persistent with pleasant floral notes Pairing: recommended with risotto, fish-based dishes, soft cheeses, and white meats. Serve at a temperature of 12-14°C.
