12 e mezzo Primitivo del Salento Varvaglione is a wine produced with Primitivo grapes grown in the vineyards of the Varvaglione winery near the Ionian Sea in the IGT Primitivo del Salento area. The Primitivo grapes are hand-harvested and brought to the winery for vinification. Fermentation and maceration take place in temperature-controlled stainless steel tanks at a maximum temperature of 30°C for about 15 days, during which numerous pump-overs and delestages occur. Afterwards, the wine is separated from the skins and aged in French oak barriques for 8 months before blending and bottling. Pairings: 12 e mezzo Primitivo del Salento Varvaglione is suitable to accompany the entire meal, including soups with meat sauces, stews, grilled red meats, and braised dishes. Storage: Store at 16-18°C Alcohol content: 12.5% Vintage: 2024 Aging: In French tonneaux for at least 8 months.
