The Aged Pecorino Testa Nera from Norcia is an artisanally produced cheese in Norcia, Umbria. Pecorino Testa Nera is made from selected sheep's milk with a semi-cooked paste. The unique feature of Pecorino Testa Nera is its rind, which is colored with tomato. This cheese is aged for at least 120 days and is sold vacuum-packed. Excellent to enjoy on its own. Pairings: Pecorino Testa Nera is truly exceptional. Pecorino Casu Sardu is also excellent when enjoyed on its own, especially when paired with a glass of Sagrantino. Storage: Store in the refrigerator, covering the cut part with a cloth. Processing: The milk used is from sheep, which is carefully selected. Once the shape is formed, the rind is colored with tomato; the cheese is aged for at least 120 days. The paste is crumbly, and during aging, the flavor becomes fuller. Aging: 22
