Amaro Averna is a bitter liqueur that originated in Sicily in Caltanissetta in 1868 when monks in a monastery produced this digestive, jealously guarding its recipe. Brother Girolamo, the inventor of Amaro Averna, decided to share his recipe with a fabric merchant who was particularly well-liked in the monastery and had done much good for the community: his name was Salvatore Averna. Since then, the fabric merchant was able to replicate the precious recipe with rigorous meticulousness and began producing this digestive. Amaro Averna is still produced today in Caltanissetta, even now that the brand has been acquired by the Campari group, always with the same ingredients. The recommendation for best savoring Amaro Averna, at the end of a meal of Sicilian specialties, is always to pour it into a special glass called a womb along with rosemary, sage, and ice; the rotational movement allows the flavors to blend and provides a true sensory experience."
