Amarone della Valpolicella Domini Veneti is a wine from the famous winery in Negrar in the heart of Valpolicella. It is made from the typical local grapes Corvina and Rondinella, cultivated in the Valpolicella Classica area. The grapes are handpicked around mid-September and left to dry in small perforated crates in rooms called "fruttai". These rooms have controlled ventilation and humidity to dry the grapes and concentrate the sugars, polyphenols, and aromas contained in the skins. Only in January are these dried grapes vinified to produce Amarone della Valpolicella Domini Veneti. After alcoholic fermentation with a long maceration on the skins, the wine is separated from the pomace and aged in French oak barrels for several years before blending and bottling. Pairings: Amarone della Valpolicella Domini Veneti traditionally pairs with game, grilled meat, braised dishes, and aged cheeses.
