Barbera d'Asti Ai Suma is the flagship of the production of the famous winery founded by Giacomo Bologna, known as Braida. The term "ai suma" in the local dialect means "we are there," indicating that the desired quality level has been reached. This wine is a selection of the best Barbera vineyards from the estate in Rocchetta Tanaro and is not produced every year, as not every year is "ai suma." The Barbera grapes are harvested slightly overripe and brought to the winery for vinification. The fermentation with maceration lasts about 20 days, during which the grapes transfer a large amount of compounds responsible for the wine's structure and taste to the must. Afterward, the wine is separated from the skins and placed in French oak barriques for 15 months, followed by blending and bottling. The company chooses a bottle aging period of 12 months before commercialization. Pairings: Barbera d'Asti Ai Suma is a full-bodied and structured wine with a good acidity that supports its drinkability. It pairs well with first and second courses based on red meat, game, and wild game, even spicy and elaborate, including roasts with sauces. It is also excellent when accompanied by aged cheeses.
