
Description
Barone Pizzini Franciacorta Animante Brut is made from Chardonnay, Pinot Noir, and Pinot Blanc grapes grown organically. The grapes are harvested manually between mid-August and early September and brought to the winery for pressing. The musts are clarified and fermented in stainless steel containers at controlled temperatures and in French oak barriques. Fermentation lasts about 15 days at a temperature of 15-16°C, after which the wines remain in contact with their fine lees for 5 months before blending. At bottling, sugar and yeast are added to each bottle to conduct the refermentation that ensures the presence of the beloved bubbles. After an aging period on the lees of 20-30 months, depending on the disgorgement, it is released to the market. Pairings: Franciacorta Barone Pizzini Animante is a pleasant and easy-drinking wine, excellent as an aperitif accompanied by Parmigiano Reggiano or traditional cured meats like Culatello. Excellent throughout the meal, from fish-based appetizers, even raw, to first courses and main courses based on white meat.
