Barone Pizzini Franciacorta Animante Brut comes from organically grown Chardonnay, Pinot Nero, and Pinot Bianco grapes. The grapes are hand-harvested between mid-August and early September and brought to the winery for pressing. The musts are clarified and fermented in stainless steel containers at controlled temperatures and in French oak barriques. Fermentation lasts about 15 days at 15-16°C, after which the wines remain in contact with their fine lees for 5 months before blending. At bottling, sugar and yeast are added to each bottle to initiate the secondary fermentation that ensures the presence of the beloved bubbles. After an aging period on the lees of 20-30 months, depending on the disgorgement, it is released to the market.
