Pairings: Bella Lodi is excellent served as an appetizer, with cold cuts and walnuts. It pairs well with medium-bodied wines such as Nebbiolo or Barbera d'Alba. Storage: keep refrigerated or in a cellar at controlled temperature. Processing: fresh milk just milked is placed in basins and starter whey is added. Then the milk is placed in copper vats, heated, and natural rennet is added. Once the curd is obtained, it is cut manually and the temperature is raised for cooking. The cheese is then placed in molds. Only the wheels that pass various checks become Bella Lodi and are colored black.
