The Dal Fatourin apricot jam is made by exclusively harvesting fresh apricots from organic farms in the countryside around Rimini, in Emilia-Romagna. The jam (often mistakenly referred to as apricot marmalade) is produced in limited quantities because the apricots are selected from a small number of plantations and can vary from year to year depending on the harvest. To maintain the organoleptic and nutritional properties, the jam is processed just a few hours after the apricots are picked. It contains no preservatives, colorants, or artificial flavors and is made by adding only concentrated grape must. Pairings: We recommend enjoying the apricot jam spread on bread and butter, or pairing it with some cheeses like pecorino sardo and Gorgonzola. Storage: Once opened, store in the refrigerator. Processing: The Dal Fatourin apricot jam is made with organic apricots, and all the raw materials are processed in an artisanal way. Everything starts when Daniela and Antonio deem the fruit's ripeness suitable; they should not be too ripe or too unripe, and the manual harvest begins. The jam starts to take shape when the apricots are cooked in short stages at high temperatures to preserve the color and appropriate nutritional values.
