Bresaola della Valtellina Ferraro is a typical product of Valtellina. The Ferraro family produces Bresaola only from selected meats without the use of preservatives such as nitrates or nitrites to ensure the naturalness of the product. Bresaola della Valtellina Ferraro is made with the topside (or silverside), but also the eye of round, and the sirloin (the one for roast beef). The beef cuts are salted, spiced, placed in a chamber for about ten days, during which they are constantly massaged and turned, then rinsed and tied before drying and aging for one and a half to two months in rooms with controlled temperature and humidity.
