Ca del Bosco Cuvée Prestige is the wine that represents Ca del Bosco worldwide. Born in 2007, it reflects the Ca del Bosco method in its entirety, from the reception of the grapes to bottling. The grapes, hand-harvested between the first and second ten days of August, are immediately placed in a refrigerated cell to be processed cold so that the aromatic heritage contained within them is not damaged by high temperatures. The subsequent processing involves washing the grapes, which are then placed in soaking tanks and subsequently in drying tunnels before being pressed in the absence of oxygen. The musts are fractionated into first and second selections based on the pressure from which they were generated, and alcoholic fermentation takes place in steel containers at controlled temperature, remaining in contact with fine lees until the March following the harvest. In April, when the base wines of Ca del Bosco are stable and clear, blending takes place. The base wines that will compose Ca del Bosco Cuvée Prestige come from 134 vineyards and 20% of reserve wines from previous vintages, which are stored in the cellar to characterize and personalize all vintages, giving a Ca del Bosco signature to all wines. Bottling is carried out using machinery patented by Ca del Bosco that prevents contact of air oxygen with the wine, avoiding oxidative shocks. This process consists of adding yeasts and sugar to the wine to allow refermentation in the bottle. After this phase, the wine remains in the cellar for at least 25 months before disgorging, dressing, and commercialization.
