Maurizio Zanella is obtained by separately vinifying the Cabernet Sauvignon, Merlot, and Cabernet Franc grapes from the best vineyards of Ca' del Bosco. The grapes, handpicked in small crates, are promptly sorted and cooled. Each cluster is selected by expert eyes and hands, then benefits from exclusive “berry spas,” a special system of washing and hydromassage of the clusters through three soaking tanks and a drying system. Next, each cluster is transported above the fermentation vat. With destemming, the berries fall into the vat from above by gravity. This eliminates traditional pumping systems, which cause skin breakage and unwanted herbaceous notes. Alcoholic fermentation and maceration were conducted for an average of 21 days, carefully managing temperature and punch-downs. Pump-overs were performed daily using a pair of elevating tanks where the wine, drawn from the bottom of the vat, is transferred by gravity. The wine, lifted by the flying tanks, is poured back into the vat at high flow to submerge the "cap." Nothing is more natural and effective for gently extracting color and tannins. At racking, the wines, still warm, are transferred into small oak barrels, 70% new, made from selected woods seasoned for at least 3 years. Only after malolactic fermentation, in mid-winter, is the racking and blending of the different lots carried out. Thus is born Maurizio Zanella, which continues its aging in wood for about 13 months. Afterwards, the different batches are blended and the wine is bottled by gravity naturally. Thanks to innovative filling systems, the wine does not undergo oxidative shocks, agitation, or further additions of sulfites. Its integrity and healthiness are guaranteed. Finally, each packaged bottle is uniquely marked to ensure traceability. Pairings: On the palate, it reveals an excellent correspondence with the nose and a great balance from the attack. Intense flavors and tannins that already show a good level of refinement. The finish is persistent with pleasant notes of plum and sour cherry.
