First white Supertuscan, produced with Chardonnay grapes from the Tenuta Casa di Sala in Panzano in Chianti. La Pietra was an innovation in the Chianti wine scene when in 1983 Ambrogio and Giovanni Folonari decided to vinify and mature Chardonnay grapes as was done with the great Tuscan reds. The result is a white wine that surprises for its impressive aptitude for long bottle aging. La Pietra Cabreo is obtained through gentle pressing and cold decanting for 24 hours. Partial thermoconditioned fermentation, partly in stainless steel and partly in toasted 5 hl barrels (50% new and 50% second and third use). Maturation: 12 months in toasted oak Tonneaux with bâtonnage. Aging: at least 6 months in bottle. Pairings: Pairs well with white meats, fish, shellfish, and aged cheeses.
