This caciocavallo is actually a Podolico Caciocavallo, made with milk from Podolica cows typical of the Basilicata and Puglia regions. In this version, the Caciocavallo is enriched with chili pepper, making it more flavorful and delicious. Caciocavallo with Chili Pepper has a cylindrical shape with yellowish streaks and pieces of chili pepper inside. The aging of Caciocavallo with Chili Pepper is considered long; in fact, it is a hard cheese with occasional eyes. Pairings: We recommend tasting the caciocavallo with chili pepper with chestnut or strawberry tree honey. It is a cheese usually consumed at the end of a meal.
