Soft pressing of the grapes, followed by static decantation of the must. Fermentation at a controlled temperature of about 20°C. At the end of fermentation, the must remains in contact with the lees for a long time. A portion of the must (about 15%) is fermented and matured in French oak barrels for 5 months. After the end of fermentation racking, the wine remains on the lees for a long time. Blending takes place in spring. Pairings: Suggestions for pairing and proper service: Serve slightly chilled (from 12 to 14 °C). A valid aperitif, to be paired with appetizers, smoked salmon and other fish preparations, pasta dishes, especially with creams and cheeses, fried fish fillets (perch, whitefish, sole), breaded.
