Còlpetrone Rosso di Montefalco is the base wine of the Còlpetrone winery in Umbria, owned by the Tenute del Cerro group. It is produced in Guado Cattaneo, in the province of Perugia, using Sangiovese, Sagrantino, and Merlot grapes. The grapes are harvested and vinified separately by variety and vineyard. After manual harvesting, they arrive at the winery for crushing. Alcoholic fermentation takes place in temperature-controlled steel tanks, and maceration promotes the transfer of aromatic and polyphenolic compounds from the skins to the wine, significantly enriching Còlpetrone Rosso di Montefalco. After this process, the wine is separated from the skins and transferred to French oak barriques, where it remains for 12 months before blending and bottling. Pairings: Còlpetrone Rosso di Montefalco pairs perfectly with first courses featuring meat sauces, stuffed pasta, grilled red meats, and aged cheeses. Storage: Store at 16-18°C.
