
Description
Còlpetrone Sagrantino di Montefalco is a wine produced with Sagrantino grapes from the Còlpetrone winery of the Tenute del Cerro group. Sagrantino is an indigenous Umbrian grape variety that has been rediscovered in the last 20 years, a challenging grape that produces a very tannic wine with an extensive range of aromas capable of standing the test of time alongside the Great Italian wines. The Sagrantino grapes are hand-harvested at perfect phenolic ripeness, and fermentation with maceration takes place in temperature-controlled stainless steel tanks at about 24-28°C for 20 days, during which numerous pump-overs and delestage are repeated. At the end of fermentation, maceration continues for a few days, raising the temperature to about 29°C to promote the polymerization processes of the tannic matter, as Sagrantino is particularly rich in it, aiming to make the tannins less aggressive. Subsequently, the Còlpetrone Sagrantino di Montefalco wine is separated from the skins and aged in French oak barriques for 12 months before blending and bottling. Pairings: Còlpetrone Sagrantino di Montefalco pairs well with great dishes based on grilled or braised red meats. It is also excellent with feathered or furred game and aged cheeses.
