Cusiè cheese is produced by Beppino Occelli with cow and goat milk. Cusiè is an aged cheese that matures for at least four months in the Valcasotto cellar on wooden boards. The cheese has an ivory-colored hard rind, and the paste is firm. Cusiè Occelli is excellent consumed on its own but also as an ingredient for ravioli fillings. An original cheese created by Occelli, Cusiè is made with selected cow and goat milk. Pairings: Excellent consumed pure to savor the aroma and fullness provided by the raw milk used. Great consumed at the end of a meal or as an ingredient for ravioli. Recommended wines: Barolo and Barbaresco Storage: Keep refrigerated, cover the cut part with a cloth. Processing: Fresh milk from the morning milking is collected and brought to the dairy, where it is inoculated with rennet and lactic ferments.
