Processing: The extraction and processing of the oil begins with the manual or mechanical harvesting of selected olives. These are placed in special ventilated crates ensuring a progressive maintenance of flavor while preserving them from any presence of mold. From the field, they move to the mill. Various processes follow, such as the pressing where the olives are crushed and the malaxation where the fruit is separated from the pit. Finally, the oil is filtered again from impurities present in the paste and is gently mixed. After being left to rest for the necessary time, it is bottled and sold commercially.
