It all starts with the olive harvest, which takes place around October and December when the green olives adequately offer their organoleptic qualities. The olives are placed in ventilated crates to prevent mold formation or loss of quality. They are then taken to the mill where they must be processed within 24 hours of harvesting. They are thus separated from different components such as leaves and branches, removing impurities, and then proceed to the crushing process where the olives are pressed and the kneading process in which the pit is separated from the fruit. Finally, after the paste is filtered and purified, the oil extraction takes place followed by a final filtration process. The various processes occur in stainless steel tanks that ensure hygiene and prevent the product from losing quality or the paste from oxidizing.
