Franciacorta Contadi Castaldi Brut is a wine from the Contadi Castaldi winery in Franciacorta. It comes from a cuvée of 80% Chardonnay, 10% Pinot Nero, and 10% Pinot Bianco from vineyards spread across the Franciacorta territory in all its vocations defined by a zoning study carried out in the 1970s. The grapes are hand-harvested around the beginning of September and vinified separately. The gentle pressing allows the extraction of musts that ferment partly in steel and partly in French oak barriques. After alcoholic fermentation at about 17°C for around 20 days following inoculation with selected yeasts, the aging of these Franciacorta wines, defined as "base Franciacorta," continues for about 7 months on their fine lees. After this period, in the spring following the harvest, the blending takes place. The Contadi Castaldi team mixes more than 60 different selections to obtain the perfect cuvée that respects the Contadi Castaldi style but also expresses the best of the Franciacorta territory. Bottling occurs after the addition of sugars and yeasts that allow the second fermentation in the bottle according to the Franciacorta method. The rest in the bottle for Franciacorta Contadi Castaldi Brut will be at least 24 months, after which it will be disgorged and released on the market.
