Friulano Schiopetto is a prestigious white wine produced in the Friuli Venezia Giulia region, in the northeast of Italy. This region is renowned for producing high-quality white wines, thanks to its temperate climate and mineral-rich soils. Friulano Schiopetto is made exclusively from Friulano grapes, a native variety of the region. These grapes grow in the vineyards of Azienda Agricola Mario Schiopetto, located in the municipality of Capriva del Friuli, in the heart of the Collio Goriziano production area. These vineyards stretch over gentle hills with a southwest exposure and are characterized by marl and sandy soil, ideal for cultivating white grapes. The production process of Friulano Schiopetto begins with the harvest, which usually takes place in mid-September. The grapes are handpicked and carefully selected to ensure the highest quality. Subsequently, the grapes are gently pressed, and the resulting must is left to ferment in stainless steel tanks at a controlled temperature. After fermentation, the wine is left to mature on fine lees for about 8 months, also in stainless steel tanks. This process, known as "surlie," allows the wine to gain more complexity and structure. Finally, the wine is bottled and left to refine in the bottle for a few months before being marketed. Friulano Schiopetto is a white wine of great elegance and finesse, with an aromatic bouquet reminiscent of almond, green apple, and wildflowers. On the palate, it is dry, full, and harmonious, with a pleasant mineral note and good persistence. It pairs perfectly with fish dishes, shellfish, and fresh cheeses.
