Friulano Schiopetto is a white wine of great prestige, produced in the Friuli Venezia Giulia region in northeastern Italy. This region is famous for producing high-quality white wines, thanks to its temperate climate and mineral-rich soils. Friulano Schiopetto is made exclusively from Friulano grapes, an indigenous variety of the region. These grapes grow in the vineyards of Azienda Agricola Mario Schiopetto, located in the municipality of Capriva del Friuli, in the heart of the Collio Goriziano production area. The vineyards extend over gentle hills with a southwest exposure and are characterized by marl and sandy soil, ideal for cultivating white grapes. The production process begins with the harvest, usually in mid-September. The grapes are handpicked and carefully selected to ensure the highest quality. They are then gently pressed, and the must is left to ferment in stainless steel tanks at controlled temperatures. After fermentation, the wine matures on fine lees for about 8 months, always in stainless steel tanks. This process, known as "sur lie," allows the wine to gain greater complexity and structure. Finally, the wine is bottled and aged for a few months before being released to the market. Friulano Schiopetto is a white wine of great elegance and finesse, with an aromatic bouquet reminiscent of almond, green apple, and wildflowers. On the palate, it is dry, full, and harmonious, with a pleasant mineral note and good persistence. It pairs perfectly with fish dishes, shellfish, and fresh cheeses.
