GUSS comes from the best Merlot grapes of the estate, obtained from the less productive vineyards planted in the most suitable soils for this grape variety. The harvest is done by hand in 20 kg crates, selecting the grapes first in the vineyard and then on a sorting table in the cellar. Alcoholic fermentation takes place in 50 hl steel vats with a skin contact period of about 1 month. This duration is allowed by the perfect ripeness of the grapes. Malolactic fermentation then occurs in wood: 5 hl tonneaux, 80% of which are new. The aging continues in the same wooden containers for about 24 months, with racking every 3 months. The wine remains in the bottle for at least 12 months before commercialization. Pairings: Aged cheeses, red meats, and game. Alcohol content: 14.5% Vintage: 2022
