Harmonium is a wine produced from the perhaps best-known Sicilian native variety: Nero d'Avola. This wine is made from grapes coming from three selected Nero d'Avola crus of the Firriato estates called Cru della Ferla, Cru della Lepre, and Cru della Beccaccia, handpicked only when perfectly ripe. These crus are characterized by a significant temperature difference between day and night despite their different exposures. The grapes are taken to the winery for vinification with maceration in steel tanks for about 15-20 days at 25-30°C. After this, the wine is separated from the skins and aged in French and American oak barriques for 12 months. Subsequently, the best parcels are blended and bottled. The wine then ages in the bottle for 6 months before being marketed. Pairings: Harmonium Firriato pairs well with Mediterranean meat dishes, pasta dishes with meat sauces flavored with aged and flavorful pecorino cheese. It is also excellent with grilled or roasted meats and pairs nicely with pecorino cheeses from southern Italy's tradition.
