I Sodi di San Niccolo is the flagship wine of the Castellare di Castellina estate, produced from a cru of Sangiovese and Malvasia Nera in the municipality of Castellina in Chianti, located at 350-400 meters above sea level from vines aged 25-30 years. The soil of the Sodi di San Niccolo vineyard is mostly calcareous, and the name Sodi derives from the presence of stones, difficult soils but capable of giving great satisfaction. The Sangiovese and Malvasia Nera grapes are hand-harvested and brought to the cellar for destemming and vinification, which takes place in temperature-controlled stainless steel tanks at 28°C for about 20 days, during which the skins and seeds release polyphenols and aromas that will characterize the wine's profile. Subsequently, the wine is separated from the skins and aged in French oak barriques, 50% new and 50% second and third use, for 30 months before blending and bottling. Once bottled, the wine remains in the cellar to age in the bottle for 12 months before being marketed.
