
Description
Groppello Joel Vigneti Storici Ca Maiol is a wine produced with Groppello, a historic variety from Valtenesi, an area located on the west coast of Lake Garda. This wine is born from the desire to rediscover this grape variety by trying to bring out its best characteristics, its aromaticity and savoriness. The Groppello grapes are harvested in September and brought to the winery for crushing. Fermentation takes place in temperature-controlled steel vats, and a fermentation process is conducted that respects the characteristics of Groppello, thus at a not excessive temperature and for a limited duration, at 25°C for about 10 days. Joel is separated from the skins and placed in steel for a few months before blending and bottling.
