Lo Sparviere Franciacorta Cuveè 7 Brut is a wine from the famous Lo Sparviere winery in Franciacorta, part of the Gussalli-Beretta group. This Franciacorta Brut is made with Chardonnay grapes grown in the best areas of Franciacorta, as Lo Sparviere owns and leases vineyards in almost all the "vocational units" of Franciacorta, thus producing Franciacorta wines with different characteristics that, during blending, will result in a very balanced product. The grapes are hand-picked around mid-August and brought to the winery for gentle pressing. The musts ferment in temperature-controlled steel tanks and a small part in French oak barriques. At the end of fermentation, the base Franciacorta wines remain in contact with their fine lees for about six months before blending and bottling, which, according to the "Franciacorta method," is done with the addition of sugars and yeast to allow the development of the famous bubbles. After 24 months of aging on the lees in the bottle, Lo Sparviere Franciacorta Cuveè 7 Brut is disgorged and released to the market.
