Lugana Cà Maiol Molin is a selection of the best company grapes for the production of a structured and elegant wine. The grapes are hand-harvested and brought to the cellar where they undergo a cold skin maceration for more than 48 hours at 3-4°C to promote the extraction of aromas from the skins to the must. The fermentation of the must takes place at a controlled temperature to enhance the aromatic activity of the yeast. Once fermentation is complete, Lugana Molin rests on its fine lees for six months before bottling.
