Lugana Maiolo Cà Maiol is the base wine of the company, its name derives from the ancient farmhouse Cascina Maiolo which later gave its name to the company. Lugana Maiolo is the Lugana produced in the largest quantity with about 400,000 bottles every year. It comes from 35 hectares of vineyard with predominantly clay soil that allows this wine to have unique characteristics of sapidity and minerality. The grapes are harvested around mid-September and brought to the cellar for soft pressing. The musts are fermented in steel at a temperature of 16°C for about 15 days. Lugana Maiolo Cà Maiol remains in contact with the fine lees for about 4 months before bottling. Pairings: Lugana Maiolo Cà Maiol is a perfect wine to pair with first courses based on fish, including lake fish, and second courses such as grilled fish that is not too spicy.
