The Chardonnay grapes are typically harvested around mid-August to early September. Once in the winery, the grapes are gently pressed and the musts are fermented in stainless steel at controlled temperatures. This Franciacorta DOCG wine is produced with a different philosophy compared to traditional methods. The base Chardonnay wine remains in stainless steel tanks aging on its fine lees for 30 months before blending and bottling with the addition of sugars and yeasts for secondary fermentation. This aging on fine lees with regular batonage enhances the wine by increasing its structure and finesse. After the secondary fermentation in the bottle, Millè Franciacorta Villa Crespia Brut ages for another 30 months before release.
