Moliterno al tartufo is a cheese produced in Sardinia with aged sheep's milk enriched with black truffle. It has a white paste with dark veins of truffle. It is a strong and flavorful cheese, excellent to consume at the end of a meal paired with full-bodied wines such as Aglianico del Vulture. Sheep's milk gives the cheese typical notes reminiscent of the barn. It is also ideal for grating over pasta dishes. Store in a cool, dry place. Sheep's milk is used for production; the curd is placed in baskets during processing. During aging, the cheese is infused with a black truffle cream that characterizes its flavor. The aging lasts 22 days.
