Mortadella is an Italian cured meat whose origins, besides Emilia Romagna, can be traced throughout much of the national territory. In the past, various types of mortadella were produced in different sizes and characterized by various ingredients: large mortadellas, small ones, very spiced or simply flavored with pepper.
