This wine is produced in the Castello della Sala vineyard, a 500-hectare area located near the Tiber River, between the provinces of Perugia and Terni. The soil of this vineyard is rich in clay and limestone, with a temperate climate that favors the ripening of the grapes. Muffato della Sala is a blend of different grapes: mainly Sauvignon Blanc, but also Grechetto, Traminer, and Riesling. The uniqueness of this wine lies in its production process: the grapes are left to wither on the vine until November, during which time the "noble rot" (Botrytis cinerea) develops, a fungus that causes the concentration of sugars in the grapes, giving the wine its characteristic sweet flavor. After harvesting, the grapes are gently pressed and the resulting must is fermented in small oak barrels. The wine is then aged in barriques for a period of 18 months, followed by an additional 12 months in the bottle. This aging process gives Muffato della Sala a complex structure and an aromatic bouquet rich in notes of honey, exotic fruit, vanilla, and nuts.
