Nebbiolo Langhe DOC La Spinetta is a wine produced with Nebbiolo grapes from the La Spinetta winery in Piedmont. The Nebbiolo used to produce this wine comes from the Barbaresco Starderi cru from vines that are about 20-25 years old. The Nebbiolo grapes are hand-harvested around mid-October and brought to the winery for vinification. After destemming, the Nebbiolo clusters are transferred to steel tanks for alcoholic fermentation, which takes place at a temperature of about 25-28°C for 10 days. During this time, frequent remontages and delestages allow the diffusion of polyphenolic and aromatic compounds from the skins to the wine. Subsequently, Nebbiolo Langhe DOC La Spinetta is separated from the skins and aged in second-passage French oak barriques for 12 months before the final blending and bottling. Pairings: Nebbiolo Langhe DOC La Spinetta is a perfect wine to pair with first courses of pasta with meat sauces, main courses such as grilled or braised meats. Excellent with typical Piedmontese cheeses like Castelmagno.
